RICOTTA RAVIOLI WITH BEETROOT SAUCE .......... 4 person

RICOTTA RAVIOLI WITH BEETROOT SAUCE .......... 4 person For paste :
200 gr ....... flour
2 each ....... egg
100 gr ....... ricotta cheese
................. salt

Preparation :

. Mold all material together (except cheese) until a strong dough is maintained.
.  Roll with pasta roller until thin enough.
. Cut the rolled dough into equal pieces.
. Put a bit of ricotta in a piece and close it up with another.
. Cook in a boiling salty water for 5 minutes and serve with beetroot souce.

For sauce :

100 gr ........ beetroot
1 clove ....... garlic
50 ml ......... cream
10 gr ......... butter
1 stem ....... fresh oregano
50 ml ........ chicken stock
................. salt and pepper

Preparation :

. Cut beetroot into mini cubes.
. Peel garlic and cut into two pieces.
. Melt butter in a heated pan, add beetroot and garlic and finally add the chicken stock.
. Mash all the prepared sauce in a blender.
. Mix with pasta, and then serve.
